A new Greek restaurant, called Santorini Grill, has completed the roster of 10 tenants planned for the Mequon Public Market opening in early June at the Spur 16 mixed-use development.

Santorini Grill will serve gyros, shish kabobs, lamb, pastitsio (Greek lasagna), and other authentic Greek dishes, according to an announcement released Tuesday by project developer Shaffer Development LLC.

The eatery is the second concept for owners Spiro Asimakopoulos and Angela Pagoulatos, who also operate Crave Bar and Food in Mequon.

Asimakopoulos will additionally be a residential tenant at the Spur 16 development, recently reserving space in one of its apartment buildings.

“We are so pleased to have Spiro and Angela live and work here with us,” Cindy Shaffer, owner of Shaffer Development said. “I am a frequent customer and huge fan of Crave. Santorini Grill will fill a much needed niche for Greek Food in our community and no one will do it better than Spiro.”

Santorini Grill is the tenth and final tenant to be announced for the 10,000-square-foot market, which is located at 6300 W. Mequon Road.

It joins local food and beverage-based vendors Anodyne Coffee, Purple Door Ice Cream, Screaming Tuna, Bavette La Boucherie, Beans and Barley, Café Corazon, Happy Dough Lucky and Bowls, along with European-style floral and gift shop Terrain as the market’s only retail concept.

Milwaukee-based St. Paul Fish Company will operate an oyster bar and restaurant adjacent to the market.

Spur 16 includes a 5,000-square-foot public wellness center that houses Club Pilates Mequon and Yama Yoga, which both opened in February.

The project’s ten luxury townhomes are now available for occupancy. Three buildings with a total of 146 apartment units will be available for occupancy in June.

The development also includes a clubhouse space that will be available exclusively for those who reside at Spur 16. It will include a pool, gathering area with a community kitchen and event space, and a workout facility with Peloton bikes.
