Restaurant proposed for vacant site on Brady Street

Qdoba owner affiliate submitted proposal

An affiliate of Roaring Fork Restaurant Group, the state’s Qdoba Mexican Grill franchisee, is proposing a two-story restaurant on one of the last remaining vacant parcels on Brady Street.

The sit-down restaurant would be built at 1348 E. Brady St., on the northwest corner of Brady and Warren streets, next to Jimmy John’s Gourmet Sandwiches, according to an application filed with the city.

If approved, construction would begin in mid-September and would be completed in January 2017.

The land is owned by Fox Point-based JC Capital 1348 LLC and assessed at $60,800.

Officials from Roaring Fork were not available for comment.
