Portillo’s officially announces July Brookfield opening

Hiring about 200 employees for first Wisconsin restaurant

Popular Chicago restaurant chain Portillo’s Hot Dogs LLC has officially announced its mid-July opening in Brookfield, first reported by BizTimes Milwaukee last month.

The restaurant was originally scheduled to open June 15.

BizTimes was the first to report in April that Portillo’s is planning additional locations in Wisconsin, and is eyeing Greenfield and Madison. The other locations Portillo’s is considering would begin opening sometime in 2017. One of its restaurants takes between six and nine months to build.

The Oak Brook, Ill.-based company, which has 42 locations in five states, plans to introduce a new menu item for its first Wisconsin restaurant—Badger Brats. Portillo’s serves Chicago-style hot dogs, Italian beef and Italian sausage, but has never before offered a bratwurst on its menu.

Portillo’s has also started the hiring process for hourly positions at the Brookfield store. A typical Portillo’s location hires about 200 employees, said Nick Scarpino, director of marketing at Portillo’s, in an April interview.

The Brookfield positions, listed on the company’s website, include cook, cashier, crew chief, manager and prep. The jobs pay up to $12 an hour.
