New Mexican restaurant ‘Hermanas’ to replace Thirsty Duck in Wauwatosa

Second concept for sisters Betsi and Gabbi Zierath

The operators of brunch restaurant Zisters in Elm Grove are planning a new Mexican-inspired concept in Wauwatosa.

Hermanas is slated for an early May opening at the former Thirsty Duck restaurant at 11320 W. Bluemound Road.

Betsi and Gabbi Zierath have taken over the 4,000-square-foot space from their father Dan Zierath, who also owns Jackson’s Blue Ribbon Pub in Wauwatosa and West Milwaukee and Thirsty Duck in Sussex, all under the Zierath Restaurant Group brand.

As Thirsty Duck in Wauwatosa closed last summer, the Zierath sisters quickly jumped on the opportunity to develop another concept, following the success of Zisters.

“When my sister and I opened Zisters (in June 2018), we had high hopes,” Betsi Zierath said in an email to BizTimes. “Our goal was to open a cute brunch spot where we would enjoy going and bringing our friends to. Since then, we have found ourselves operating what we have been told is becoming a cornerstone in the community.”

Like Zisters, the concept behind their new modern-Mexican restaurant is inspired by the Zieraths’ travels abroad — this time to Talum.

“We’ve always enjoyed Mexico as a family, whether it was just us two or everyone together,” said Zierath. “Tulum spoke to us and we knew we needed to bring that vibe here to Milwaukee.”

Asked about expectations of opening a new restaurant amid the ongoing pandemic, Zierath cited the ongoing vaccine rollout as a positive sign.

Hermanas would open daily at 11 a.m., serving gourmet food and drinks. Plans include seasonal outdoor seating and live music on the patio along West Bluemound Road. The restaurant would have 25 employees.

Plans will be considered by the city’s Plan Commission on March 8.
