Chicago-based Portillo’s will open its first Wisconsin restaurant in 2016 as part of the Shoppes at The Corridor development on Bluemound Road, west of Calhoun Road, in Brookfield.
Portillo’s is an iconic Chicagoland restaurant known for its Chicago-style hot dogs and Italian beef. The company has more than 30 locations in the Chicago region.
The proposed Brookfield location will be approximately 9,000 square feet and have about 200 seats, said Nick Scarpino, director of marketing for Portillo’s. The restaurant will feature a modern take on a 1950’s diner, and incorporate elements of Bluemound Road’s history from that era.
Scarpino said the company has looked at multiple sites in Wisconsin, but Brookfield was the best fit.
“We see Wisconsin as a great opportunity for future restaurants,” Scarpino said. “If this one is successful, we see no reason why there couldn’t be more.”
Dave Arnold, executive vice president at Irgens, the firm constructing The Corridor, said the development is the perfect venue for Portillo’s.
Arnold thanked Dan Rosenfeld and Dan Cohen from Mid-America for their help in making the Shoppes at The Corridor Portillo’s newest home.
The Corridor is a 66-acre mixed-use development at the Ruby Farm site in Brookfield that will include office buildings, retail, health facilities and fitness centers. Pending approval from the Brookfield Plan Commission and City Council, Portillo’s plans to open its restaurant in the second half of 2016.
Heather Cleveland, President of the Board of Directors for Goodside Grocery cooperative announced the planned opening of the new store located at 1131 North 8th Street in Sheboygan. The store will be a full-service grocery emphasizing healthy, local, natural, and organic products. Operations at the expanded site will begin before the holiday season.
